3. I Feel Good

   Beef rolls with 15 spices, "Pho" flavors (Traditional Vietnamese soup) - Japanese radish and red cabbage pickled in rice alcohol - Papaya and wakame salad - Trio of wasabi roasted sesame seed.

4. Between Land & Sea

   Raviole stuffed with Thaï prawn tartare and vietnamese water chestnut, finely hand chopped - Turmeric Sabayon with "Phu Quoc" pepper from Vietnam - Sliced almonds roasted with Madras curry - Sauté of vietnamese mushrooms, shitake and seasonal truffle.

5. The Bridge of Flavor

   Duck filet cooked at low temperature in three stages - Sauce with yuzu, black soy, mirin, honey, ginger and sake reduction - Grilled sweet potato cream with coconut milk - Caramelized Paris mushrooms with sesame oil and oyster sauce - Japanese omelet steamed with champagne.

Our evening with Jean Yves was fantastic. His unique fusion of food from Asian cultures combined with French cooking was something to behold. (I even enjoyed mushrooms for the first time in my life!). It is obvious why he achieved the honor of "Master Chef". This was such a unique experience in the wine cellar of the host’s home! The courses were made even more delicious by the chef’s stepwise recommendations on how to fully enjoy each course! Jean Yves won Masterchef for France in 2012 and it was really a treat to have him prepare a dinner for us! Our favorites were the macarons and uniquely flavored sake!Exclusive delicious experience!

Jean gave us a wonderful unique experience in food, every bite brought something unique and haven't experienced before. The drinks paired perfectly with each course. The Macron was my favourite part of the meal as I have never experienced something like this before, Ive had macarons, but these were something else of an experience you wont find in many places in the world if at all. Started with one very very small mishap, I had cleared prior to booking I was vegetarian but something got lost in communication and the first dish brought out was not, within 5 mins chef Yves prepared me a special vegetarian dish and subsequently every single course was an amazing vegetarian course. Me and my husband enjoyed the entire experience, with 6 other people in a very special room in the chef’s private residence. I would highly recommend it to anyone that enjoys fine dining in a relaxing and fun, yet elegant environment. Great food and nice experience overall

I wanted to give my family some exposure to haute cuisine while in Paris. We went to a well known 3 Michelin star restaurant (at a well known palace, ie 5 stars hotel)....that meal was great.....but Jean Ives was better. Jean Ives truly is passionate about his craft, and is sincerely interested in sharing it with those who come to visit for a meal. He took the time to explain what we were eating, and how he had prepared.....even had some suggestions on how to eat certain to maximize the experience. Dishes were prepared to perfection, and wine choices were excellent. Jean Ives' fusion style has created dishes you will find ANYWHERE. Our session was enjoyable and we learned how to make the perfect macaron. Jean is an expert chef and provides clear direction on what to do. The only flaw was that we were expecting a private session and were surprised when two other people showed up for the class. Apparently the class can be up to four people. Good experience

My husband loves to make macarons and wanted some tweaks to improve the process. Well, Jean-Yves entirely changed his mind on how to perfect the process. Now home, we can hardly wait to jump in and try our new tips and tricks. It was such a delightful macaron class, in a beautiful setting, we decided to come to one of his dinners the following week. The French/Asian fusion was delightful and our tastebuds are so incredibly happy we returned, bringing along some friends to experience the ambiance and food with us. It is a pricey experience, but it is very intimate, very thorough, and very delicious. My daughter and i had a wonderful exclusive tutorial in how to expertly make French macarons, we were given a recipe card and I took many notes to help me remember the details of the techniques we were shown. We were then treated to a gourmet tasting of what was created with additional gastronomic flourishes (and champagne!), and we took the remainder of the batch of macarons away with us. First off I want to say Jean was very, very kind. Spoke good English and was very comfortable with what he was doing. His macarons were fantastic and I can’t wait to try them on my own. Now here is my reasoning for a 6/10 star rating. I signed up for this class thinking it was going to be hands on and it wasn’t that at all which was very disappointing. I watched him do everything which was fun, but I paid quite a bit of money to have the experience myself. He did inform me right away when I got there that if I haven’t made macarons before, he does it all because he wants to make sure they turn out right. I completely understood that, but I wouldn’t have signed up for the class knowing I was paying 160 euros to watch someone bake. The class was supposed to go for 2 hours and it ended in an hour so again, paid 160 to watch someone bake and only had the class for an hour. That was disappointing. But I know he does cooking classes and I would 100% sign up for that. His home is beautiful and he definitely knows what he’s doing! If you are a first time macaron baker and want to be hands on, I wouldn’t sign up for this class. Great experience, not what I expected

Jean Yves welcomed me into his home (stunningly designed by him) and his kitchen and shared his expertise, baking tips and generous spirit. Our family signed up for a macaron baking class with Jean Yves. We weren’t sure what to expect, but it was the highlight of our trip to Paris. His kitchen was so cool and he did a great job involving the kids and made baking the perfect macaron seem so easy. The end product was delicious.
